PEANUT BRITTLE



1/2 cup water
2 cups sugar
1 cup corn syrup
2 Tbsp. Butter
2 cups whole blanched peanuts
1 tsp. baking soda

Butter (or cover with parchment paper) two cookie sheets.
In a heavy pot, on medium heat, combine water; sugar; and corn syrup.
Bring to boil, stirring continuously. Continue boiling until a candy thermometer reads 300 degrees or until syrup reaches the hard-crack stage when you drip a drop of it into cold water.
Remove from the heat, and stir in the butter; peanuts and baking soda. Use caution, because the baking soda will cause the mixture to foam.
Pour the brittle onto the cookie sheets and quickly spread with a hot spatula. When it has hardened, break into pieces.
(Makes about 2 pounds of peanut brittle.)
