Mom's Zucchini Bread !




MAKES 2 LOAVES
1 cup walnuts chopped
4 large eggs
2 cups sugar
1 cup vegtable oil
3 1/2 cups unsifted flour
1 1/2 teas. baking soda
1 1/2 teas. salt
1 teas. cinnamon
3/4 teas. baking powder
2 cups grated zucchini (not peeled)
1 teas. vanilla
1 cup raisens mixed with a little of the above flour, to stop raisens from sticking together.

Chop walnuts in medium pieces. Set aside. Beat eggs and gradually beat in sugar and oil. Combine dry ingredients; add to first mixture alternating with grated zucchini. Stir in raisens, walnuts and vanilla. Turn into 2 greased and lightly floured loaf pans. (9x5x2 1/2)
Bake on lowest rack 350 degrees for 55 minutes until done. Test doneness with toothpick. Let stand 10 minutes in pans, then on rack. Can be sprinkled with glaze made of confectioners sugar and milk mixed.
