Salmon zest

  Scrape about 1 teaspoon of zest from an orange into a shallow dish with the salmon.  (Only the outer skin, none of the white rind)
 

Squeeze the juice from one orange into the dish.

Add a bit of pulp

 Add about 1 cup of teriyaki sauce (the richer the sauce the better)

Cover and marinate the salmon for about 45 minutes.

Turn once.

Broil or BBQ and baste several times

Cook until just barely done

Serve and enjoy!

Tropical Salsa     

This salsa is an incredible treat over broiled salmon or any hearty fish.

Mix ingredients and refrigerate then spoon over broiled fish
