Fresh salmon burgers

 

Heat half the oil in a heavy nonstick skillet over medium high heat.

Sauté onion 3-4 minutes, or until softened.

Cut salmon crosswise into 2 inch strips.

Bring wine to a simmer in a skillet over medium heat.

Add salmon and simmer lightly 3-4 minutes, or until almost opaque throughout.

Discard liquid and place salmon in a bowl.

Mash with a fork.

Add orange rind, 2 Tbs. orange juice and next 3 ingredients.

Add sautéed onion and stir well.

Thoroughly mix in egg white and season with salt and pepper to taste.

Shape salmon mixture into 4 patties.

Heat remaining oil in a heavy nonstick skillet over medium high heat.

Cook patties about 2 minutes per side, or until browned on both sides.

Serve patties on rolls.
