Banana Pudding
Line casserole dish sides and bottom with vanilla wafers. Pour on top of these a little of the pudding (carefully). Slice up a banana on top of this. Then put a layer of vanilla wavers. Pour on more pudding, then another layer of sliced banana and another layer of vanilla wavers, and finally the last of the pudding. Top with a couple of crushed up vanilla wavers for decoration. Serve. Refrigerate what you don't plan to eat now.
Vanilla Pudding
In top of double boiler over boiling water, combine sugar, cornstarch and 1/4 tsp salt. Stir in milk. Cook and stir over medium heat till thickened and bubbly. Cook and stir about 2 minutes more. Remove from heat. Gradually stir about 1 cup of the HOT mixture into the beaten egg. Return all to saucepan. Cook 2 more minutes. Stir constantly. Remove from heat and stir in butter and vanilla.
Serves 4 (Note: if you want Chocolate Pudding, simply add some cocoa to the mixture when you first start. Then you can use this for a chocolate pudding pie, or simply as pudding in dishes.)

Hot Fudge Pudding Cake
1. In 9-inch square cakepan, combine the flour, 3/4 cup sugar, 1/4 cup cocoa, baking powder and salt. Stir.
2. Blend in the melted butter along with milk and vanilla extract.
3. In a separate bowl, combine the remaining 3/4 cup sugar, remaining 1/4 cup cocoa, and the nuts.
4. Sprinkle mixture in bowl over mixture in 9-inch cake pan.
5. Carefully pour the HOT water over all. DO NOT STIR.
6. Gently place in oven and bake in preheated oven at 350 F for 40-45 minutes.
7. Serve immediately in bowls with scoops of vanilla ice cream on top.
This tastes so much like the real thing that you can't hardly tell it apart.
Mock Pecan Pie
Soak Post grapenuts in water until water is absorbed. Combine sugar, Karo syrup, margarine and salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Remove from heat, beat eggs until foamy. Add small amount of hot syrup mixture to the eggs. Mix well and ad rest of syrup and other ingredients. Pour into unbaked pie shell. Bake at 375 F for 40-50 minutes.
Note: I cook mine at 350 F for 45 minutes, that at 325 F (or 300 F even) for 10-15 minutes until the center is cooked. (You can tell by sticking a sharp knife in the middle.)
