Turkish Coffee
Turkish coffee is frequently made in a small brass or copper pot, using French-style dark roast coffee beans, with a combination of sugar and water. Ask the coffee shop where you buy the beans to grind the coffeebeans for turkish coffee (it will looked very powdered, something like cocoa).
The brew is brought to a boil and removed from heat until the froth subsides. This procedure is repeated twice more, with the frothing coffee then being poured into tiny demitasse cups for serving.
To 1 cup cold water in pot, add 2 teaspoons sugar. Bring to a boil. Take off heat and add 1 heaping teaspoon powdered coffee. Bring to boil as above described, being careful not to boil the coffee over the top of the pot. Do this twice.
Pour into small cups. Sip while HOT.
Do not drink the very bottom of the coffee as it is the settled grounds.
