Nathan's Tater Crisps

4 large taters
2 Tbsp melted butter
Accent brand spice
garlic powder
Lawry's brand spice
sweet leaf basil
2x2inch wedge cheddar cheese

-cut taters into 1/4 inch rounds
-spread taters on cookie sheet
-paint taters with melted butter
-sprinkle all spices above on taters
generously
-cut 1/2x1/2 inch pieces cheese
and put in middle of each tater
-Bake at 400 degrees F. for 20-30 min.

Henni's Mashed Taters

5 large taters
1 small can cream
1 stick butter
salt & pepper

-boil taters until fork goes through
them easily
-using colander, drain off all water
-put drained taters in mixing bowl
-add butter
-add half can cream
-using mixer, mix on low setting
-if you like them thin, add more cream
-salt & pepper to taste


Faerie's Fritter Bread

Preheat oven to 400 degrees F.
4 cups corn cut off cob
1 cup flour
1 tsp salt
1 egg
1/2 cup cream
1/2 cup water
1 stick butter

-Blend 4 cups corn lightly
in blender.
-Mix all ingredients
except butter
in a bowl.
-Melt butter in iron skillet.
-Pour batter in skillet.
-Bake for 15 min. on bottom
rack of oven.
-Broil on top rack until
golden brown.
-Cool 10 minutes.
-Best if lightly spread butter
on top before eating.

Faerie's Corn Bread

Preheat oven to 325 degrees F.
2 cups self rising corn meal
1/2 cup self rising flour
1/2 cup sugar
1 egg
1 Tbsp. bacon grease
2 cups butter milk
1/2 cup water
1/4 cup cooking oil

-Mix dry ingredients in big bowl.
-Beat in egg, buttermilk & water.
-Add bacon grease (melted).
-Pour cooking oil in iron skillet
(or pan) and coat it.
-Pour batter into skillet.
-Bake for one hour.

Faerie's Mommie's
Vegetable Soup

2 tomatoes
1/2 head of cabbage
1 can corned beef
1 giant can tomato juice
2 cups macaroni (optional)
1 box frozen corn
1 bag frozen, mixed
vegetables
3 taters diced

-*don't add any water*
-Cook on medium until
taters tender.
-Eat with cornbread :)

Faerie's Wilted Lettuce
1 head leaf lettuce,
broken in little pieces.
1 lb. bacon, fried crisp,
and crumbled.
Save 4 oz. bacon grease.
6 green onions, sliced.
4 oz. malt vinegar.
4 oz. sugar

-Mix lettuce, onions
& bacon together
on platter.
-In pan, heat vinegar & water.
-Add sugar and melt well.
-As you go to take salad
to table to serve,
pour grease mixture
over lettuce mix.
-Serve fast.

Faerie's Cabbage

1 head cabbage
8 strips of bacon
1 Tblsp. cracked peppercorns
4 Tblsp. butter, softened
4 Big Pieces of Foil

-Wedge cabbage in 4 pieces
-Place one wedge on one piece
of foil big enough to cover
the wedge completely
-Using fingers, smooth wedge
with a tablespoon of soft butter
-Sprinkle lightly with peppercorns
-Wrap with 2 pieces of bacon
-Do this on each wedge
-Wrap with foil
-Cook on BBQ grill for 40 min.

Grandmother's

Mississippi
Mud Cake

Mix and set aside:
2 cups sugar
2 cups flour

Put in pan and
bring to boil:
2 sticks butter
4 Tblsp cocoa
1 cup water

Pour this over the
flour and sugar
mixture. Stir well.

Add:
1/2 cup buttermilk
2 eggs, slightly beaten
1/2 tsp baking soda
1 TBLSP cinnamon
1 TBLSP vanilla

Mix well and pour in
greased 9 x 13 pan.
Bake in 400 degree oven for
20 minutes.

ICING
Place in pan on stove:
1 stick margarine
4 TBLSP cocoa
6 TBLSP buttermilk
Melt and bring to a boil.

Remove from heat
and add:
1 box powdered sugar
1 TBLSP vanilla
Nuts (if desired)

Beat well and pour
over slightly
warm cake.
ENJOY!


rtread's Chili
Also called:
THE ULTIMATE
CHILI EXPERIENCE

2 lbs. finely diced
venison or sirlion
1 (8 oz) can tomato sauce
...(rtread uses 2 cans)
1/2 cup chili powder
2 cups diced onion
2 cloves garlic, minced
1/2 - 1 tsp cumin
(also called "comino")
1 tsp oregano
2 tsp paprika
Salt to taste
Red Pepper to taste
2 TBLSP Masa Flour

- Sear 2 lbs vension or sirloin.
- Add tomato sauce and water.
(rtread says he throws in a can
of Ro-tel tomatoes too)
- Stir in all ingredients except
the red pepper and masa flour.
- You can guess what to do next.
Cover skillet or saucepan and
simmer for 30 minutes.
- Stir occasionally, taste often!
- Stir masa flour into 1/4 cup
warm water to make a thick,
flowable mixture.
- Add masa mixture and simmer
another 20 minutes.
(Masa mixture will "tighten"
the flavor!)
- ENJOY!!
