AMARETTO
CHEESECAKE COOKIES
(Yield: 16 cookies)
1 cup self-rising flour
1/3 cup firmly packed brown sugar
6 tablespoons butter or margarine, softened
1 8-ounce package cream cheese, softened
¼ cup sugar
1 egg
¼ cup amaretto
½ teaspoon vanilla extract
¼ cup chopped almonds
Preheat oven to 350°F. Spray an 8x8-inch baking pan with
non-stick vegetable spray.
In a large mixing bowl, combine flour and brown sugar. Cut
in butter until mixture resembles coarse crumbs. Reserve 1 cup of
the mixture. Press remaining mixture onto the bottom of prepared
baking pan.
Bake 12 to 15 minutes or until lightly browned.
In a large mixing bowl, beat cream cheese and sugar until smooth.
Add egg, amaretto, and vanilla; beat until well blended. Spread batter
over partially baking crust. Combine almonds with reserved crumb
mixture; sprinkle over the batter.
Bake 20 to 25 minutes or until center is set. Cool and cut
into squares.
