APPLE
CHEDDAR COOKIES
(Yield: 2 dozen)
½ cup butter or margarine, softened
½ cup sugar
1 egg
1 teaspoon vanilla extract
1½ cups self-rising flour
½ teaspoon ground cinnamon
1½ cups shredded Cheddar cheese
1½ cups finely chopped apples
¼ cup chopped walnuts
Preheat oven to 375°F. Lightly spray cookie sheets with
non-stick vegetable spray.
In a large mixing bowl, cream butter and sugar until light and fluffy.
Add egg and vanilla; beat until well blended. Add flour and cinnamon,
stirring until well blended. Stir in cheese, apples, and walnuts.
Drop by rounded teaspoonfuls onto prepared cookie sheets.
Bake for 15 minutes. Remove from cookie sheets; cool completely
on a wire rack.
