APPLE
COOKIES
(Yield: 4½ dozen)
½ cup butter or margarine, softened
1-1/3 cups firmly packed brown sugar
1 egg
¼ cup apple juice
1 cup finely chopped apples
2 cups whole wheat flour
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup raisins
1 cup chopped nuts
Preheat oven to 375°F. Spray baking sheets with non-stick
vegetable spray.
In a large mixing bowl, cream butter and brown sugar until light
and fluffy. Beat in egg and apple juice. Stir in remaining
ingredients. Drop by teaspoonfuls, 2-inches apart, on prepared baking
sheets.
Bake 12 to 13 minutes or until lightly browned. Remove from
baking sheets; cool on a wire rack.
