APPLESAUCE
RAISIN CHEWS
(Yield: 4 dozen)
1 cup butter or margarine, softened
1 cup firmly packed brown sugar
1 cup applesauce
1 egg
1 teaspoon vanilla extract
2 cup self-rising flour
1 teaspoon ground cinnamon
2½ cups rolled oats
1 cup raisins
Preheat oven to 350°F. Lightly spray cookie sheets with
non-stick vegetable spray.
In a large mixing bowl, cream butter and brown sugar until light
and fluffy. Add applesauce, egg, and vanilla; beat until well blended.
Add flour, beating until blended. Stir in oats and raisins.
Drop by rounded tablespoonfuls onto prepared cookie sheets.
Bake 11 to 13 minutes or until lightly browned. Cool on cookie
sheet for 1 minute. Remove from cookie sheet; cool completely on
a wire rack.
