APPLESAUCE
RAISIN COOKIES
(Yield: 3½ dozen)
3¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 cup butter or margarine, softened
¾ cup firmly packed brown sugar
¾ cup sugar
2 eggs, lightly beaten
½ cup applesauce
1 cup raisins
½ cup chopped nuts
Confectioners’ sugar icing
Finely chopped nuts
Preheat oven to 350F.
In a medium bowl, combine flour, baking soda, salt, cinnamon, cloves,
and nutmeg; set aside.
In a large mixing bowl, cream butter and sugars until light and fluffy.
Beat in eggs. Add flour mixture and applesauce; beat until well blended.
Stir in raisins and nuts. Drop by tablespoonfuls, 2-inches apart,
onto UNGREASED cookie sheets.
Bake 10 to 12 minutes or until golden brown. Remove from cookie
sheets; cool on a wire rack. Spread with confectioners’ sugar icing;
sprinkle with chopped nuts.
