APPLESAUCE-RYE BARS
(Yield: 2 dozen)

¼ cup shortening
2/3 cup sugar
1 egg
1 cup applesauce
1 cup rye flour
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
½ cup raisins
¼ cup chopped nuts
Butter Frosting (below)

Preheat oven to 350°F.  Spray a 13x9-inch baking pan with non-stick vegetable spray.

In a large mixing bowl, cream shortening and sugar until light and fluffy.  Beat in egg and applesauce.  Stir in remaining ingredients until well blended.  Spread in prepared baking pan.

Bake 25 to 30 minutes or until a tester inserted in the center comes out clean.  Cool in the pan on a wire rack.  Spread with Butter Frosting.  Cut into bars.

BUTTER FROSTING

2 tablespoons butter or margarine, softened
2 cups confectioners’ sugar
1 teaspoon vanilla extract
3 tablespoons milk

In a small bowl, cream butter and confectioners’ sugar.  Stir in vanilla and milk to make a spreading consistency.
