APPLESAUCE
SQUARES
(Yield: 4 dozen)
2-2/3 cups self-rising flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
¼ teaspoon ground cloves
1 cup butter or margarine, softened
2 cups firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
2-2/3 cups rolled oats
1 cup applesauce
1 cup chopped pecans
2 cups raisins
In a medium bowl, combine flour and spices; set aside.
Preheat oven to 350°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a large mixing bowl, cream butter and brown sugar until light
and fluffy. Add eggs, one at a time, beating well after each addition.
Beat in vanilla. Stir in flour mixture, then oats until well blended.
Pat two-thirds of the mixture into the prepared baking pan. In a
small bowl, combine applesauce, pecans, and raisins; spread over the top
of the dough.
On a lightly floured waxed paper, press or roll out the remaining
dough into a 13x9-inch rectangle. Carefully place dough over applesauce
mixture.
Bake for 30 minutes or until lightly browned. Cool in the pan
on a wire rack. Cut into squares. Dust with confectioners’
sugar, if desired.
