BANANA COOKIES
(Yield: 3 dozen)

2-1/4 cups all-purpose flour
2-1/2 teaspoons baking powder
½ teaspoon salt
2/3 cup shortening
1 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 cup mashed bananas

Preheat oven to 375°F.

In a medium bowl, combine flour, baking powder, and salt; set aside.

In a large mixing bowl, cream shortening and sugar until light and fluffy.  Beat in eggs and vanilla.  Add flour mixture alternately with mashed bananas, blending well after each addition.  Drop by tablespoonfuls onto UNGREASED cookie sheets.

Bake for 12 minutes or until golden brown.  Remove from cookie sheets; cool on a wire rack.
