BANANA
OATMEAL COOKIES
(Yield: 2 dozen)
1½ cups self-rising flour
1 cup sugar
¼ teaspoon ground nutmeg
¾ teaspoon ground cinnamon
¾ cup shortening
1 egg, well beaten
1 cup mashed bananas
2/3 cup rolled oats
½ cup chopped walnuts
Preheat oven to 375°F. Lightly spray cookie sheets with
non-stick vegetable spray.
In a large mixing bowl, combine flour, sugar, nutmeg, and cinnamon;
cut in shortening until mixture resembles coarse crumbs. Add egg,
banana, oats, and walnuts; stir until well blended. Drop, 1-inch
apart, by teaspoonfuls onto prepared cookie sheets.
Bake for 15 minutes or until cookies are set. Remove from cookie
sheets; cool completely on a wire rack.
