BLACK BOTTOM BANANA BARS
(Yield: 2½ dozen)

½ cup butter or margarine, softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
1½ cups mashed bananas
1½ cups self-rising flour
¼ cup cocoa powder

Preheat oven to 350°F.  Spray a 13x9-inch baking pan with non-stick vegetable spray.

In a large mixing bowl, cream butter and sugar until light and fluffy.  Add egg and vanilla; beat thoroughly.  Beat in bananas.  Add flour; mix well.

Divide the dough in half.  Add cocoa powder to one half; mix well.  Spread cocoa batter into prepared baking pan.  Spoon remaining batter on top and swirl with a knife.

Bake for 25 minutes or until a tester inserted in the center comes out clean.  Cool in pan on a wire rack.  Cut into bars.
