BLONDIES
(Yield: 9 servings)
½ cup butter or margarine, softened
1 cup firmly packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup self-rising flour
¾ cup semisweet chocolate morsels
¾ cup chopped pecans
Preheat oven to 325°F. Line an 8x8-inch baking pan with
aluminum foil letting the ends extend above the pan on 2 sides. Grease
the foil with butter.
In a medium bowl, beat butter, brown sugar, egg, and vanilla until
pale and fluffy. Stir in flour, chocolate morsels, and pecans.
Spread evenly in prepared baking pan.
Bake 30 to 35 minutes or until a tester inserted in the center comes
out clean. Cool in pan on a wire rack.
Lift the foil by the ends onto a cutting board. Remove foil.
Cut into 9 squares.
