BROWNIE
COOKIES
(Yield: 3 dozen)
2/3 cup shortening
1½ cups firmly packed brown sugar
1 tablespoon water
1 teaspoon vanilla extract
2 eggs, lightly beaten
1½ cups self-rising flour
1/3 cup cocoa powder
2 cups semisweet chocolate morsels
Preheat oven to 375°F.
In a large mixing bowl, cream shortening and sugar with water and
vanilla until light and fluffy. Beat in eggs. In a small bowl,
combine flour and cocoa powder; add to creamed mixture, stirring until
blended. Stir in chocolate morsels. Drop by rounded tablespoonfuls,
2-inches apart, onto UNGREASED cookie sheets.
Bake, 1 sheet at a time, 7 to 9 minutes, or cookies are set.
Place aluminum foil on a countertop.
Remove cookies from cookie sheet and place on the foil. Cool
completely.
