BROWNIES

(Yield: 16 brownies)
3 1-ounce squares unsweetened
chocolate
1 cup sugar
¾ cup self-rising flour
¾ cup cottage cheese
3 egg whites
1 teaspoon vanilla extract
Confectioners’ sugar
Preheat oven to 350°F. Spray an 8x8-inch baking pan with
non-stick vegetable spray.
In a small saucepan, melt chocolate. In a food processor, combine
sugar, flour, cottage cheese, egg whites, and vanilla; purée.
Add chocolate; blend well. Pour into prepared baking pan.
Bake 20 to 25 minutes or until just set. Sprinkle with confectioners’
sugar. Cut into squares.
