BUTTERSCOTCH
RAISIN BARS
(Yield: 2 dozen)
1 cup self-rising flour
½ cup firmly packed brown sugar
½ cup butter or margarine, melted
2 eggs, lightly beaten
1 cup firmly packed brown sugar
2 tablespoons self-rising flour
1 cup butterscotch morsels
½ cup raisins
½ cup chopped pecans
Preheat oven to 350°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a small bowl, combine flour, brown sugar, and butter, mixing
until moistened. Press onto the bottom of the prepared baking pan.
Bake for 10 minutes. Cool.
In a medium bowl, combine eggs, brown sugar, flour, butterscotch
morsels, raisins, and pecans, mixing until well blended. Pour over
the baked layer.
Bake 20 to 25 minutes or until golden brown. Cool in pan on
a wire rack. Cut into bars.
