CHEDDAR
FRUIT DROPS
(Yield: 2 dozen)
½ cup butter or margarine, softened
¼ cup sugar
¼ cup firmly packed brown sugar
1 egg
1 teaspoon vanilla extract
1½ cups self-rising flour
1½ cups shredded Cheddar cheese
1 8-ounce can crushed pineapple, drained
¼ cup chopped maraschino cherries
Preheat oven to 375°F. Lightly spray cookie sheets with
non-stick vegetable spray.
In a large mixing bowl, cream butter and sugars until light and fluffy.
Add egg and vanilla; beat until well blended. Add flour, stirring
until well blended. Stir in cheese, pineapple, and cherries.
Drop, 1-inch apart, by teaspoonfuls onto prepared cookie sheets.
Bake for 15 minutes or until lightly browned. Remove from cookie
sheets; cool completely on a wire rack.
