CHEWY
COFFEE BROWNIES
(Yield: 24 brownies)
1½ cups firmly packed brown sugar
½ cup butter or margarine
2½ tablespoons instant coffee powder
1 tablespoon vanilla extract
2 eggs
2 cups self-rising flour
½ cup semisweet chocolate morsels
Preheat oven to 350°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a small saucepan, combine brown sugar, butter, and coffee powder;
cook over low heat for 4 minutes or until butter melts and mixture is smooth.
In a large mixing bowl, combine sugar mixture and eggs; beat until
smooth. Gradually add flour, beating well. Stir in chocolate
morsels. Spread batter evenly in prepared baking pan.
Bake for 18 minutes. Let cool in pan on a wire rack.
Cut into squares.
