CHEWY OATMEAL COOKIES
(Yield: 2½ dozen)

¾ cup butter or margarine, softened
1¼ cups firmly packed brown sugar
1 egg
1/3 cup milk
1½ teaspoons vanilla extract
3 cups rolled oats
1 cup self-rising flour
¼ teaspoon ground cinnamon
1 cup raisins
1 cup coarsely chopped walnuts

Preheat oven to 375°F.  Spray baking sheets with non-stick vegetable spray.

In a large mixing bowl, combine butter, brown sugar, egg, milk, and vanilla; beat until well blended.  In a medium bowl, combine oats, flour, and cinnamon.  Add oatmeal mixture to creamed mixture until just blended.  Stir in raisins and walnuts.  Drop by rounded tablespoonfuls, 2-inches apart, onto prepared baking sheets.

Bake 10 to 12 minutes or until lightly browned.  Cool for 2 minutes on baking sheets.  Remove to kitchen counter; cool completely.
