CHOCOLATE
BROWNIE
OATMEAL COOKIES
(Yield: 6 dozen)
1 8-ounce package cream cheese,
softened
½ cup butter or margarine, softened
1 cup firmly packed brown sugar
½ cup sugar
2 eggs
½ teaspoon vanilla extract
2 cups semisweet chocolate morsels,
melted
1½ cups self-rising flour
3 cups rolled oats
1 cup chopped walnuts
Confectioners’ sugar
In a large mixing bowl, combine cream cheese,
butter, and sugars; beat until light and fluffy. Add eggs and vanilla;
beat well. Add melted chocolate; beat until well blended. Stir
in flour, then oats and walnuts; mixing thoroughly. Cover; chill
at least 1 hour.
Preheat oven to 350°F. Lightly spray
cookie sheets with non-stick vegetable spray.
Shape the dough into 1-inch balls. Place,
3-inches apart, on prepared cookie sheets.
Bake 8 to 10 minutes or until cookies are almost
set. Cool for 1 minute. Remove from cookie sheets; cool completely
on a wire rack. Dust with confectioners’ sugar.
