CHOCOLATE CHIP CLOUD COOKIES
(Yield: 2 dozen)

3 egg whites
1/8 teaspoon cream of tartar
1 cup sugar
½ teaspoon vanilla extract
3 tablespoons cocoa powder
½ cup miniature chocolate morsels
1/3 cup chopped walnuts

Preheat oven to 250°F.  Line 2 cookie sheets with aluminum foil.  Spray with non-stick vegetable spray.  Lightly dust with flour.

In a large mixing bowl, beat egg whites until foamy.  Add cream of tartar; beat until soft peaks form.  Gradually beat in sugar and vanilla until stiff.  Sift cocoa powder over the top.  Fold into the egg whites.  Fold in chocolate morsels and walnuts.  Drop by teaspoonfuls onto prepared cookie sheets.

Bake 25 to 30 minutes or until crisp.  Cool on cookie sheets for 2 minutes.  Remove from cookie sheets; cool completely on a wire rack.
