CHOCOLATE
CHIP PEANUT COOKIES
(Yield: 4 dozen)
2 eggs, lightly beaten
½ cup milk
1/3 cup vegetable oil
2 cups self-rising flour
2 3½-ounce packages instant chocolate pudding mixes
½ cup semisweet chocolate morsels
2/3 cup chopped peanuts
Preheat oven to 350°F. Spray cookie sheets with non-stick
vegetable spray.
In a large mixing bowl, combine eggs, milk, oil, flour and pudding
mixes, stirring until well blended. Stir in chocolate chips and peanuts.
Drop by teaspoonfuls, 2-inches apart, on prepared cookie sheets.
Bake 10 to 12 minutes or until firm. Remove from cookie sheets;
cool on a wire rack.
