CHOCOLATE
CHIP PUDDING COOKIES
(Yield: 5 dozen)
¾ cup butter or margarine, softened
¾ cup firmly packed brown sugar
1 3½-ounce package instant chocolate pudding mix
1 teaspoon vanilla extract
2 eggs, lightly beaten
1¼ cups self-rising flour
1 6-ounce package semisweet chocolate morsels
1 cup chopped nuts
Preheat oven to 375°F.
In a large mixing bowl, combine butter, brown sugar, pudding mix,
and vanilla; beat until smooth. Beat in eggs. Gradually add
flour; stir in chocolate morsels and nuts. Drop by teaspoonfuls,
2-inches apart, onto UNGREASED baking sheets.
Bake 8 to 10 minutes or until delicately browned. Remove from
baking sheets; cool on a wire rack.
