CHOCOLATE CRINKLES
(Yield: 4 dozen)

1½ cups sugar
½ cup vegetable oil
4 1-ounce squares unsweetened chocolate, melted and cooled
2 teaspoons vanilla extract
3 eggs, lightly beaten
2 cups self-rising flour
Confectioners’ sugar

In a large mixing bowl, combine sugar, oil, chocolate, and vanilla; stir until well blended.  Beat in eggs.  Add flour, beating until well blended.  Cover; chill for 2 hours.

Preheat oven to 375°F.  Spray cookie sheets with non-stick vegetable spray.

Shape dough, 1 tablespoon at a time, into balls.  Roll in confectioners’ sugar.  Place on prepared cookie sheets.

Bake 10 to 12 minutes or until firm.  Remove from cookie sheets; roll in confectioners’ sugar.  Cool on a wire rack.
