CHOCOLATE
CRUNCHIES
(Yield: 2 dozen)
2 cups self-rising flour
¼ cup cocoa powder
½ cup butter or margarine
1 cup sugar
2 eggs
2 teaspoons vanilla extract
2 cups crushed corn flakes
Preheat oven to 400°F. Spray baking sheets with non-stick
vegetable spray.
In a medium bowl, combine flour and cocoa powder; set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy.
Beat in eggs and 2 tablespoons flour mixture. Stir in vanilla and
remaining flour mixture. Divide into 24 portions. Shape into
smooth balls; roll in crushed corn flakes. Place on prepared baking
sheets.
Bake 15 to 20 minutes or until a tester inserted in the center comes
out clean. Remove from baking sheets; cool on a wire rack.
