CHOCOLATE
MACAROON BARS
(Yield: 2 dozen)
1¼ cups graham cracker crumbs
1/3 cup sugar
¼ cup cocoa powder
1/3 cup butter or margarine, melted
1 14-ounce can condensed milk
2-2/3 cups flaked coconut
2 cups bread crumbs
2 eggs
2 teaspoons vanilla extract
1 cup semisweet chocolate morsels
Preheat oven to 350°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a medium bowl, combine cracker crumbs, sugar, cocoa powder, and
butter; tossing to mix well. Press firmly on the bottom of the prepared
baking pan.
Bake for 10 minutes.
In a medium bowl, combine condensed milk, coconut, bread crumbs,
eggs, vanilla, and chocolate morsels; mix well. Spoon evenly over
prepared crust.
Bake for 30 minutes or until lightly browned. Cool. Cut
into bars. Store in refrigerator.
