CHOCOLATE-MINT
COOKIES
(Yield: 4 dozen)
½ cup butter or margarine, softened
¾ cup sugar
¼ cup cocoa powder
1 egg, lightly beaten
2 teaspoon vanilla extract
1¾ cups self-rising flour
¼ cup crushed peppermint candy
In a large mixing bowl, cream butter and sugar until light and fluffy.
Beat in cocoa powder, egg, and vanilla until well blended. Stir in
flour and candy, blending thoroughly. Divide dough in half; shape
into 6-inch rolls. Wrap in plastic wrap. Chill for 2 hours.
Preheat oven to 375°F. Spray cookie sheets with non-stick
vegetable spray.
Cut the rolls into ¼-inch slices. Place on prepared
cookie sheets.
Bake 10 to 12 minutes or until firm. Remove from cookie sheets;
cool on a wire rack.
