CHOCOLATE PEANUT  BUTTER 
COOKIES
(Yield: 2 dozen)

1½ cups firmly packed brown sugar
1 cup butter or margarine
1½ cups peanut butter
1 egg
2 teaspoons vanilla extract
2 cups self-rising flour
1 cup semisweet chocolate morsels

In a large mixing bowl, cream butter and sugar until light and fluffy.  Beat in peanut butter, egg, and vanilla.  Gradually add flour to creamed mixture.  Fold in chocolate morsels.  Cover the dough; refrigerate for 1 hour.

Preheat oven to 350°F.  Lightly spray cookie sheets with non-stick vegetable spray.

Shape dough into ¾-inch balls.  Place, 3-inches apart, on prepared cookie sheets.  With the bottom of a glass, press each ball into a 1½-inch diameter circle.

Bake 15 to 20 minutes or until lightly browned.  Remove from cookie sheets; cool on a wire rack.
