CHOCOLATE PEANUT DROPS
(Yield: 2 dozen)

½ cup butter or margarine, softened
½ cup sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
½ cup semisweet chocolate morsels, melted
1 cup self-rising flour
Peanut Topping (below)

Preheat oven to 350°F.  Spray cookie sheets with non-stick vegetable spray.

In a large mixing bowl, cream butter and sugar until light and fluffy.  Beat in egg and vanilla, then the chocolate.  Stir in flour until blended.

Drop by heaping teaspoonfuls, 2-inches apart, on prepared cookie sheets.  Spoon 1 teaspoon Peanut Topping on the center of each cookie.  Press down slightly with the back of the spoon.  Sprinkle with chopped nuts.

Bake 10 to 12 minutes or until cookies look dry.  Cool on a wire rack.

PEANUT TOPPING

1/3 cup peanut butter
1/3 cup firmly packed brown sugar
1 tablespoon self-rising flour
¼ cup peanuts, chopped

In a small bowl, combine peanut butter, sugar, and flour; set aside.
