CHOCOLATE
PECAN BROWNIES
(Yield: 16 squares)
1 cup semisweet chocolate morsels
1/3 cup shortening
2 eggs
½ cup sugar
½ cup self-rising flour
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 375°F. Spray 8x8-inch baking pan with non-stick
vegetable spray.
In a small saucepan, over low heat, heat chocolate morsels and shortening
until melted and smooth. In a large mixing bowl, beat eggs and sugar
until thick and lemon-colored. Stir in flour, chocolate mixture,
and vanilla until well blended. Pour into prepared baking pan.
Sprinkle with pecans; press lightly into the batter.
Bake for 25 minutes or until brownies pull away from the sides of
the pan. Cool on a wire rack. Cut into squares.
