CHOCOLATE
WALNUT MERINGUES
(Yield: 3 dozen)
½ cup walnuts
¼ cup semisweet chocolate morsels
2 egg whites
1/8 teaspoon cream of tartar
2/3 cup sugar
½ teaspoon vanilla extract
Preheat oven to 250°F. Spray 2 cookie sheets with non-stick
vegetable spray.
In blender, combine walnuts and chocolate morsels; blend until finely
chopped.
In a small bowl, beat egg whites and cream of tartar until soft peaks
form. Gradually beat in sugar until stiff peaks form. Fold
in the chocolate mixture and vanilla. Drop by teaspoonfuls, 1-inch
apart, onto prepared cookie sheets.
Bake for 30 minutes or until firm. Let stand for several minutes
on the cookie sheets. Carefully remove to a wire rack; cool completely.
