CHRISTMAS MACAROONS
(Yield: 1½ dozen)

2 egg whites
¾ cup sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
¼ cup self-rising flour
¼ cup chopped pecans
1 7-ounce package flaked coconut
½ cup assorted colored gum candy, cut into small pieces

Preheat oven to 325°F.  Spray cookie sheet with non-stick vegetable spray.

In a large mixing bowl, beat egg whites until foamy; gradually beat in sugar until stiff.  Fold in salt, vanilla, flour, pecans, coconut, and candy until well blended.  Drop by teaspoonfuls onto prepared cookie sheet.

Bake for 15 minutes or until lightly browned.  Let cool for 1 minute.  Remove from cookie sheet; cool completely on a wire rack.
