CHRISTMAS WREATHS 
(German Berlinerkranser)
(Yield: 5 dozen)

1 cup butter or margarine, softened
½ cup sugar
2 egg yolks
2 hard-boiled eggs yolks, sieved
3 cups self-rising flour
1 egg white
Colored sugar

In a large mixing bowl, cream butter and sugar until light and fluffy.  Beat in egg yolks and sieved egg yolks.  Add flour, mixing with fingers to make a dough.  Wrap in plastic wrap; chill for 1 hour.

Preheat oven to 350°F.

Divide the dough into 3 equal pieces.  On a lightly floured board, roll each piece into 1/8-inch thick rectangles.  Cut into 5x1½-inch strips.  Place on UNGREASED baking sheets, forming into rings.  Brush with egg white; sprinkle with colored sugar.

Bake 8 to 10 minutes or until lightly browned.  Remove from baking sheets; cool completely on a wire rack.
