CHUNKY
CHOCOLATE COOKIES
(Yield: 2 dozen)
½ cup butter or margarine, softened
½ cup sugar
¼ cup firmly packed brown sugar
1 teaspoon vanilla extract
1 egg, lightly beaten
1 cup self-rising flour
1½ cups sweet chocolate morsels
1-1/3 cups flaked coconut
In a large mixing bowl, beat butter, sugars, vanilla, and eggs until
light and fluffy. Blend flour into the butter mixture. Stir
in chocolate chips and coconut. Chill for 1 hour.
Preheat oven to 350°F.
Drop by tablespoonfuls, 2-inches apart, onto UNGREASED baking sheets.
Bake 12 to 15 minutes or until lightly browned. Cool on baking
sheets for 2 minutes. Remove from baking sheets; cool completely
on a wire rack.
