CINNAMON SUGAR BUTTER COOKIES
(Yield: 3 dozen)

3 tablespoons sugar
1 tablespoon ground cinnamon
1 cup firmly packed brown sugar
½ cup sugar
1 cup butter or margarine, softened
2 eggs, lightly beaten
2 teaspoons vanilla extract
2½ cups self-rising flour

In a small bowl, combine sugar and cinnamon; set aside.

Preheat oven to 300°F.  Lightly spray cookie sheets with non-stick vegetable spray.

In a large mixing bowl, cream sugars and butter until light and fluffy.  Add eggs and vanilla, beating until well blended.  Stir in flour until just blended.  Shape dough into 1-inch balls.  Roll each ball in cinnamon-sugar mixture.  Place, 2-inches apart, on prepared cookie sheets.

Bake 18 to 20 minutes or until lightly browned.  Remove from cookie sheets; cool completely on a wire rack.
