COCONUT COOKIES
(Yield: 4 dozen )

½ cup butter or margarine, softened
½ cup sugar
½ cup firmly packed brown sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1 cup self-rising flour
½ cup rolled oats
1 cup chopped apples
1-1/3 cups flaked coconut

Preheat oven to 375°F.

In a large mixing bowl, beat butter until fluffy; gradually beat in sugars.  Blend in egg and vanilla.  Stir in flour, oats, apple, and coconut.  Drop by teaspoonfuls onto UNGREASED cookie sheets.

Bake for 10 minutes or until golden brown.  Remove from cookie sheets; cool on a wire rack.
