COCONUT
RAISIN BARS
(Yield: 2 dozen)
½ cup butter or margarine, softened
½ cup confectioners’ sugar
1 cup self-rising flour
2/3 cup flaked coconut
2 eggs
1 teaspoon vanilla extract
1 cup firmly packed brown sugar
2 tablespoons self-rising flour
2/3 cup raisins
½ cup semisweet chocolate morsels
2 cups flaked coconut
Preheat oven to 350°F. Spray a 9x9-inch baking pan with
non-stick vegetable spray.
In a medium bowl, cream butter and confectioners’ sugar until light
and fluffy. Stir in flour and coconut. Press onto the bottom
of prepared baking pan.
Bake 15 to 20 minutes or until golden brown.
In a large mixing bowl, beat eggs, vanilla, and brown sugar until
thick. Fold in flour and raisins. Pour over the prepared crust.
Bake for 30 minutes. Remove from oven; sprinkle with chocolate
morsels and cover with aluminum foil for 5 minutes. Gently spread
softened chocolate to frost. Sprinkle with coconut. Cool on
a wire rack. Cut into bars.
