COFFEE
CHIP DROPS
(Yield: 3 dozen)
1¼ cups firmly packed brown sugar
3/4 cup butter or margarine, softened
2 tablespoons coffee
1 teaspoon vanilla extract
1 egg
1¾ cups self-rising flour
1 tablespoon ground coffee
1½ cups semisweet chocolate morsels
½ cup milk chocolate morsels
½ cup chopped walnuts
36 chocolate kisses, unwrapped
Preheat oven to 375°F. Lightly spray cookie sheets with
non-stick vegetable spray. Place sheets of aluminum foil on countertop
for cooling cookies.
In a large mixing bowl, combine brown sugar, butter, coffee, and
vanilla; beat until well blended. Add egg, beating until blended.
In a small bowl, combine flour and ground coffee. Add to creamed
mixture, stirring until just blended. Stir in chocolate morsels and
walnuts. Drop, 2-inches apart, by rounded tablespoonfuls onto prepared
cookie sheets.
Bake, one sheet at a time, 8 to 10 minutes or until lightly browned.
Place 1 chocolate kiss in the center of each cookie. Cool for 2 minutes
on cookie sheet. Remove from cookie sheet; place on foil and cool
completely.
