COOKIES
(Yield: 10 dozen)
1 cup shortening
½ cup butter or margarine, softened
1½ cups sugar
1½ cups firmly packed brown sugar
3 eggs
1½ teaspoons vanilla extract
3 cups self-rising flour
3 cups rolled oats
2 cups semisweet chocolate morsels
1 cup chopped walnuts
Preheat oven to 325°F. Spray cookie sheets with non-stick
vegetable spray.
In a large mixing bowl, cream shortening, butter and sugars until
light and fluffy. Add eggs, one at a time, beating well after each
addition. Stir in vanilla. Stir in flour, then oats, chocolate
morsels, and walnuts. Drop, 1-inch apart, by teaspoonfuls, onto prepared
cookie cookies.
Bake for 15 minutes. Remove from cookie sheets; cool completely
on a wire rack.
