1 8-ounce package chopped dates
1 tablespoon lemon juice
½ cup water
2 cups self-rising flour
1 cup firmly packed brown sugar
1 cup butter or margarine
2 cups finely crushed corn flakes
Preheat oven to 350°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a medium saucepan, combine dates, lemon juice, and water.
Bring to a boil and simmer, stirring constantly, for 2 minutes or until
slightly thickened; cool.
In a medium bowl, combine flour and brown sugar. Cut in butter
until mixture resembles coarse crumbs. Stir in corn flakes.
Press half of the mixture into prepared baking pan. Spread the date
mixture on crumbs to cover completely. Top with remaining crumb mixture.
Gently press into date mixture.
Bake 25 to 30 minutes. Cool in pan on a wire rack. Cut
into 3x1½-inch bars.
