DATE-NUTTY
OATMEAL COOKIES
(Yield: 2½ dozen)
3 cups rolled oats
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground cinnamon
¾ cup butter or margarine, softened
1¼ cups firmly packed brown sugar
1 egg
1/3 cup orange juice
1½ teaspoons vanilla extract
1 cup flaked coconut
1 cup chopped dates
1 cup chopped walnuts
In a large bowl, combine oats, flour, soda, salt, and cinnamon; set
aside.
Preheat oven to 375°F. Spray cookie sheets with non-stick
vegetable spray.
In a large mixing bowl, cream butter and brown sugar until light
and fluffy. Add egg, orange juice, and vanilla; beat until
well blended. Add flour, beating until just blended. Stir in
coconut, dates, and walnuts. Drop, 2-inches apart, onto prepared
cookie sheets.
Bake, one cookie sheet at a time, 10 to 12 minutes or until cookies
are lightly brown. Cool for 2 minutes on cookie sheet. Remove
from cookie sheet; cool completely on a wire rack.
