DATE-OATMEAL COOKIES
(Yield: 2½ dozen)

2¼ cups rolled oats
1 cup crushed bran flakes
¼ cup self-rising flour
¾ cup butter or margarine, softened
1 cup firmly packed brown sugar
1 egg, lightly beaten
2 teaspoons grated lemon rind
1 8-ounce package chopped dates

Preheat oven to 350°F.  Spray cookie sheets with non-stick vegetable spray.

In a medium bowl, combine oats, bran, and flour; set aside.

In a large mixing bowl, cream butter and brown sugar until light and fluffy.  Beat in egg and lemon rind until blended.  Stir in flour mixture, then dates until well blended.  Drop by tablespoonfuls, 2-inches apart, onto prepared cookie sheets.

Bake for 10 minutes or until browned around the edges.  Remove from cookie sheets; cool completely on a wire rack.
