DOUBLE CHOCOLATE
REFRIGERATOR COOKIES
(Yield: 8 dozen)
2¾ cups self-rising flour
¼ teaspoon ground cinnamon
1 cup butter or margarine, softened
1 cup sugar
1 cup firmly packed brown sugar
4 1-ounce squares semisweet chocolate, melted
1 egg
1 teaspoon vanilla extract
2 cups semisweet chocolate mini morsels
In a medium bowl, combine flour and cinnamon; set aside.
In a large mixing bowl, cream butter and sugars until light and fluffy.
Add melted chocolate, egg, and vanilla; beat until well blended.
Stir in flour mixture and chocolate morsels.
Divide dough into 3 equal pieces; shape each piece into an 8-inch
log. Wrap in plastic wrap, then aluminum foil. Chill overnight.
Preheat oven to 375°F. Lightly spray cookie sheets with
non-stick vegetable spray.
With a sharp knife, cut rolls into ¼-inch-thick slices.
Place, 1-inch apart, on prepared cookie sheets.
Bake 8 to 10 minutes or until lightly browned. Remove from
cookie sheets; cool completely on a wire rack.
