FABULOUS
FIG BARS
(Yield: 3 dozen)
24 ounces figs, steamed and chopped
½ cup chopped walnuts
1/3 cup sugar
¼ cup rum or orange juice
2 tablespoons hot water
½ cup butter or margarine, softened
1 cup firmly packed brown sugar
1 egg
1½ cups self-rising flour
1¼ cups rolled oats
Rum Glaze (below)
Preheat oven to 350°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a small bowl, combine figs, walnuts, sugar, rum, and hot water;
set aside.
In a large mixing bowl, cream butter and brown sugar until light
and fluffy. Add egg, mixing until smooth. Stir in flour and
oats to make a soft dough. Reserve 1 cup of dough. Press remaining
dough onto the bottom of the prepared baking pan, forming a thin layer.
Firmly pat fig mixture over the dough. Drop reserved dough by teaspoonfuls
over the top, allowing the fig mixture to show between the drops.
Bake for 30 minutes or until golden brown. Cool completely
in pan. Drizzle with rum glaze. Cut into bars.
RUM GLAZE
½ cup confectioners’ sugar
3 to 4 teaspoons rum
In a small bowl, combine confectioners’ sugar with enough rum to
make a smooth, thin glaze.
