½ cup butter or margarine, softened
½ cup firmly packed brown sugar
1 cup self-rising flour
2 eggs, beaten
1 cup firmly packed brown sugar
2 tablespoons self-rising flour
½ cup flaked coconut
½ cup chopped pecans
¾ cup chopped figs
1 teaspoon grated lemon rind
Preheat oven to 375°F. Spray a 13x9-inch baking pan with
non-stick vegetable spray.
In a medium bowl, cut butter into brown sugar and flour until mixture
resembles coarse crumbs. Press on the bottom of prepared baking pan.
Bake for 10 minutes. Cool.
In a large mixing bowl, beat eggs and brown sugar until foamy.
Stir in flour, coconut, pecans, figs, and lemon rind. Pour over the
prepared crust.
Bake for 30 minutes or until the filling is set. Cool in pan
on a wire rack. Cut into bars.
